Uttara Kannada style chicken curry
Uttara kannada style chicken curry, Traditional, Authentic, Coastal chicken curry, packed with dry spices aroma, with fresh coconut, creamy texture chicken gravy.

Ingredients
- 750 gm Chicken
- 1/2 Coconut
- 8 Dry red chilly
- 2 tbsp Coriander seeds
- 1/4 tsp Fenugreek seeds
- 2 Onion medium
- 1 Tomato medium
- 5 cloves Garlic
- 1 inch Ginger
- 2 Green chilly
- 1/4 cup Coriander leaves
- 4 Black pepper corns
- 1/2 inch Cinnamon
- 2 Cloves
- 2 Cardamom
- 2 tsp Poppy seeds
- 2 pieces Black stone flowers
- 1/2 Star anise
- 1 Kapok buds or Marathi moggu
- 1 Bay leaf
- 1/2 tbsp Salt
- 2 tbsp Oil
- 1 tbsp Ghee
Instructions
- Green Paste : In a mixing jar add green chillies, coriander leaves, ginger, blend it to fine paste, by adding 1 tbsp of water.
- Red Paste : In a pan add 1 tbsp oil, add all dry spices one by one black pepper corns, cinnamon, cloves, cardamom, black stone flower, star anise, kapok buds or marathi moggu, bay leaf, poppy seeds, coriander seeds, fenugreek seeds, onion, garlic, red chillies, fry for 2 min, switch off the flame, add coconut, let it cool down, blend it to fine paste by adding required amount of water.
- In a deep pan add 1 tbsp oil + 1 tbsp ghee, add onion, cook till translucent, add tomato, cook till tomatoes become soft, add chicken, salt and turmeric powder, cook for 5 min by closing lid.
- Now add green paste, close the lid cook for 2 min, now add red paste, water according to gravy consistency, mix well, cook for another 4 to 5 mins to maintain its tenderness, do not cook much as chicken becomes rubbery.
