Tomato-Vegetable Sambar

Tomato-Vegetable Sambar, toor dal and vegetables cooked in tomato puree and sambar powder.

Ingredients

  • 1/2 cup Toor Dal
  • 1 cup Potato roughly chopped
  • 1 cup Carrot roughly chopped
  • 4 cup Water
  • 2 tbsp Ghee / Clarified Butter
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1/2 tsp Asafoetida / Hing
  • 2 strings Curry Leaves
  • 4 Green Chilly slits
  • 6-7 cloves Garlic roughly crushed
  • 1 big Onion chopped
  • 1.5 cup Tomato Puree
  • 2 Drumstick
  • 1 tbsp Salt
  • 1 tsp Turmeric Powder
  • 2 tbsp Sambar Powder
  • 2 tbsp Coriander Leaves chopped

Instructions

  • In a pressure cooker add washed toor dal, potato, carrot, water.
  • Close the lid, cook for 3-4 whistles.
  • In a kadai add ghee, mustard seeds, cumin seeds, curry leaves, green chilly, hing, crushed garlic.
  • Saute.
  • Add onion, saute.
  • Now add drumstick, salt, turmeric powder.
  • Mix well, close the lid and cook for 3-4 mins on medium flame.
  • Add tomato puree, stir well.
  • Close the lid and cook for 4-5 mins on medium flame.
  • Add cooked dal mixture.
  • Mix.
  • Add 2 cups water, stir well.
  • Now add sambar powder.
  • Mix well, close the lid and cook for 5 mins on medium flame.
  • Garnish with chopped coriander leaves.
  • Delicious Tomato-Vegetables Sambar is ready to have.
