ದೇವಸ್ತಾನ ಶೈಲಿಯ ಸಾಂಬಾರ್ ಪುಡಿ ಮತ್ತು ಸಾಂಬಾರ್/Temple Style Sambar Powder and Sambar, simple, yet tasty sambar recipe, prepared by a blend of dals and spices.
Servings: 250 gm powder
Ingredients
For Sambar Powder :
- 2 tbsp Oil
- 3/4 cup Toor Dal
- 1/2 cup Urad Dal
- 1/2 cup Chana Dal
- 1 tbsp Pepper Corns
- 20-25 Dry Red Chilly
- 2-3 strings Curry Leaves
- 1 tsp Mustard Seeds
- 1 tbsp Fenugreek Seeds
- 1/4 cup Cumin Seeds
- 1 cup Coriander Seeds
- 1 tsp Turmeric Powder
For Sambar :
- 1 tbsp Oil
- 1/2 tsp Asafoetida / Hing
- 1 tsp Mustard Seeds
- 2 tsp urad Dal
- 4-5 Dry Red Chilly
- 2 strings Curry Leaves
- 1 tbsp Jaggery
- 1 tbsp Tamarind soaked in water
- 1 tsp Salt
- 2 tbsp Coriander Leaves chopped
- 4-5 tbsp Prepared Sambar Powder
Instructions
Sambar Powder :
- In a kadai add oil, toor dal, chana dal, urad dal, saute it for 1-2 mins on medium flame.
- Add curry leaves, dry red chilly, mustard seeds, saute it for a min on medium flame.
- Now add pepper corns, fenugreek seeds, saute it for 1-2 mins on medium flame.
- Add coriander seeds, cumin seeds.
- Saute it for 2 mins on medium flame, do not burn.
- Let it cool down completely.
- Add fried dal and spices mixture to a mixing jar, turmeric powder.
- Blend to fine powder.
- ದೇವಸ್ತಾನ ಶೈಲಿಯ ಸಾಂಬಾರ್ ಪುಡಿ/Temple Style Sambar Powder is ready. Store it in air tight container for 3-4 months.
Sambar Preparation :
- In a vessel add oil, mustard seeds, curry leaves, dry red chilly, asafoetida, urad dal, saute it for a min.
- Add 2 cups of water, give a stir.
- Now add prepared sambar powder, stir well.
- Add jaggery and tamarind water, salt, stir.
- Cook well, garnish with chopped coriander leaves.
