Ratlami Sev is the famous savoury snack prepared by using split Bengal gram (chickpea) flour, cloves and peppers, originating from Ratlam, a town in the western state of Madhya Pradesh in India.

Ratlami Sev is flavoured with cloves (main ingredient for masala powder is cloves), so its also called as Laung (Cloves) Sev.

Ingredients

For Laung Masala Powder :

  • 15 Cloves
  • 1/4 inch Cinnamon
  • 2 Cardamom
  • 1/4 tsp Ajwain / Carom seeds
  • 1/2 tsp Fennel Seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Pepper corns

Other Ingredients :

  • 2 cups Besan / Gram Flour
  • 1/4+ 2 cups Oil
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilly Powder
  • 1/2 tsp Ginger Powder
  • 1/4 tsp Asafoetida / Hing
  • 1/4 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 tbsp lemon Juice
  • 1/2 tsp Chaat Masala Powder
  • 1/2 cup Water

Instructions

For Laung Masala Powder :

  • In a kadai add cloves, cinnamon, cardamom, ajwain, fennel seeds, cumin seeds, pepper corns. Dry roast for 1 min on medium flame. let it cool down.
  • Add this to a mixing jar.
  • Blend it fine powder.

Sev preparation :

  • In a vessel add prepared laung masala powder, turmeric powder, red chilly powder, dry ginger powder, asafoetida/hing, chaat masala powder, baking soda, salt. Mix well. Add besan/gram flour, lemon juice, hot oil.
  • Give a stir using a spatula, as oil is hot, Mix well using hand.
  • Add water little by little, knead a sticky dough.
  • Grease sev maker with oil.
  • Fill the sev maker with prepared besan dough.
  • Heat oil in a kadai. Press the sev maker, move in a circular motion. Cook for 1 min.
  • Flip gently, cook till oil stops sizzling.
  • Ratlami Sev / Laung Sev is ready to have.
