Palak Soup
Palak Soup, a soup dish, butter blanched palak-onion-green chilly-garlic, blended and cooked in milk.

Ingredients
- 1 cup Palak / Spinach
- 2 tbsp Unsalted Butter
- 1 Bay Leaf
- 1 small Onion
- 1 clove Garlic
- 1 Green Chilly
- 1/2 tbsp Maida / All Purpose Flour
- 1/2 cup Milk
- 1/2 tsp Sugar
- 1/2 tsp Salt
- 1/8 tsp White Pepper Powder
- 1/2 cup Water
- 2 tbsp Fresh Cream
Instructions
- In a pan add 1 tbsp unsalted butter, bay leaf, saute.
- Add garlic, green chilly, onion, saute.
- Now add palak.
- Saute for 2 mins on medium flame.
- Discard bay leaf, add sauted palak mixture to mixing jar.
- Blend it fine paste.
- In a pan add 1 tbsp unsalted butter, maida.
- Saute for 2 mins on low flame.
- Add milk.
- Bring it to boil, keep stirring till it becomes thick.
- Add sugar, salt, white pepper powder.
- Mix well.
- Add palak puree.
- Mix well, add water.
- Stir and cook for 3-4 mins on medium flame, keep stirring.
- Add fresh cream, give a stir.
- Creamy Palak Soup is ready to have.
