Mughlai Chicken Maharani
Mughlai Chicken Maharani, a thick gravy recipe, chicken cooked in masala powder and a blender of onion-cashew-almond-green chilly paste.

Ingredients
Masala Powder :
- 1/4 tsp Nutmeg
- 1 inch Cinnamon
- 4 Cardamom
- 4 Cloves
- 2 string Mace
- 1 Bay Leaf
- 4 Dry Red Chilly
- 1 tsp Pepper Corns
- 3 tbsp Coriander seeds
- 1 tsp Fennel Seeds
- 1 tsp Cumin seeds
Onion-Cashew-Almond-Green Chilly Paste :
- 2 medium Onion
- 10 - 15 Cashew
- 8 - 10 Almond
- 2 - 3 Green Chilly
Other Ingredients :
- 1 kg Chicken
- 2 - 3 tbsp Ghee/Clarified Butter
- 2 tbsp Ginger Garlic Paste
- 1/2 tbsp Salt
- 1/2 cup Curd
- 1 tbsp Kasuri methi
- 2 tbsp Fresh cream
- 2 tbsp Coriander Leaves chopped
Instructions
Prepare Masala Powder :
- In a pan add nutmeg, cinnamon, cloves, cardamom, mace, bay leaf, dry red chilly, pepper corns, coriander seeds, fennel seeds, cumin seeds, dry roast for 1 to 2 mins on medium flame.
- grind it to fine powder.
Onion-Cashew-Almond-Green Chilly Paste :
- In a mixing jar add chopped onion, cashew, soaked and peeled almond, green chilly.
- Blend to fine paste, do not add water.
Prepare Mughlai Chicken Maharani :
- In a pan add Ghee/Clarified butter, ginger garlic paste, saute.
- Add Chicken, mix it well, close the lid and cook for 3 mins on high flame.
- Add salt, give a mix.
- Now add Onion-cashew-almond-green chilly paste, mix well, close the lid and cook for 3 to 4 mins on medium flame.
- Add Curd, stir well on low flame, close the lid and cook for 2 more mins.
- Add Masala powder.
- Stir well, close the lid and cook for 5 mins in medium flame.
- Add crushed kasuri methi, Cook for 2 to 3 mins on high flame
- Add Fresh Cream, Saute.
- Garnish with Coriander leaves.
- Give a stir and switch off the flame.
- Rich, Yummy, Delicious Mughlai Chicken Maharani is ready to have.
