Kaju Masala
Kaju Masala, a rich and creamy gravy recipe, ghee fried cashew cooked in spicy powders, cream, milk and cashew paste.

Ingredients
- 1/2+1/4 cup Cashew
- 1 big Onion
- 2 big Tomato
- 2 tbsp Fresh Cream
- 1/2 cup Milk
- 1 tsp Ginger Garlic Paste
- 1 tsp Garam masala powder
- 1 tsp Red chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Kasuri methi
- 1 Green chilly
- 2 tbsp Oil
- 3 tbsp Ghee
- 1" Cinnamon
- 1 Bay leaf
- 1 Cardamom
- 1 tbsp Coriander leaves
- 1/2 tbsp Salt
Instructions
- In a mixing jar add 1/4 cup cashew + 2 tbsp milk, grind it to fine paste.
- In a pan add 1 tbsp ghee+1 tbsp oil, add 1/2 cup cashew, fry till golden brown. keep aside.
- In the same pan add 1 tbsp oil, add roughly chopped onion, saute it till translucent, add green chilly, fry for a min, add roughly chopped tomato, salt, close the lid, cook till tomato cook softly, cool down and grind it to fine paste.
- In a pan add 1 tbsp oil + 1 tbsp ghee, add bay leaf, cinnamon, cardamom, fry for 30 sec, add red chilly powder, turmeric powder, garam masala powder,kasuri methi, fry for a min.
- Add ginger garlic paste, saute it, add grind tomato-onion paste, add salt, mix well.
- Add cashew paste and fresh cream, mix well, close the lid and cook for 3 to 4 mins.
- Add milk, according to consistency, add fried cashew, mix it add coriander leaves, cook well.
- Rich creamy Kaju Masala is ready to have.
