Heerekayi Ennegayi / Stuffed Ridge Gourd
Heerekayi Ennegayi / Stuffed Ridge Gourd, a semi gravy recipe, ridge gourd cooked in dry coconut -peanut -Uchellu/Gurellu/Niger seeds masala.

Ingredients
- 2 Heerekayi/ Ridge gourd
- 1/2 cup Peanut
- 8 tbsp Oil
- 2 tbsp Coriander seeds
- 1 tsp Cumin seeds
- 5 strings Curry leaves
- 6 cloves Garlic
- 4 Green chilly
- 1/2 cup Coriander leaves
- 1 tbsp Uchellu / Gurellu / Niger Seeds
- 1/2 cup Dry Coconut
- 2 tbsp Tamarind
- 1 tsp Garam Masala Powder
- 1.5 tsp Salt
- 1 tsp Mustard Seeds
- 1 big Onion chopped
- 1 big Tomato chopped
- 1/2 tsp Turmeric Powder
- 1/2 cup Water
Instructions
- Peel the ridge gourd, cut the sides, make 4 inch piece, slit them into 4 parts.
- Roast peanuts and remove the skin, keep aside.
- In a pan add oil, cumin seeds, curry leaves, garlic, green chilly, coriander leaves, coriander seeds, uchellu / gurellu / niger seeds, dry coconut.
- Saute for 2 mins on medium flame.
- Add tamarind.
- Saute for 1 min.
- In a mixing jar add roasted masala, roasted peanut, garam masala powder, salt.
- Grind it coarse powder, do not add water.
- Stuff the prepared powder into ridge gourd.
- In a kadai add oil, mustard seeds, curry leaves.
- Saute.
- Add onion, tomato.
- Now add turmeric powder.
- Saute.
- Add stuffed ridge gourd.
- Close the lid and cook for 3 mins on medium flame.
- Saute.
- Add left over prepared powder, water.
- Mix well.
- Add salt, mix.
- Cook for 7 - 8 mins on medium flame.
- Delicious Heerekayi Ennegayi / Stuffed Ridge Gourd is ready.
