Ingredients

  • 2 Heerekayi/ Ridge gourd
  • 1/2 cup Peanut
  • 8 tbsp Oil
  • 2 tbsp Coriander seeds
  • 1 tsp Cumin seeds
  • 5 strings Curry leaves
  • 6 cloves Garlic
  • 4 Green chilly
  • 1/2 cup Coriander leaves
  • 1 tbsp Uchellu / Gurellu / Niger Seeds
  • 1/2 cup Dry Coconut
  • 2 tbsp Tamarind
  • 1 tsp Garam Masala Powder
  • 1.5 tsp Salt
  • 1 tsp Mustard Seeds
  • 1 big Onion chopped
  • 1 big Tomato chopped
  • 1/2 tsp Turmeric Powder
  • 1/2 cup Water

Instructions

  • Peel the ridge gourd, cut the sides, make 4 inch piece, slit them into 4 parts.
  • Roast peanuts and remove the skin, keep aside.
  • In a pan add oil, cumin seeds, curry leaves, garlic, green chilly, coriander leaves, coriander seeds, uchellu / gurellu / niger seeds, dry coconut.
  • Saute for 2 mins on medium flame.
  • Add tamarind.
  • Saute for 1 min.
  • In a mixing jar add roasted masala, roasted peanut, garam masala powder, salt.
  • Grind it coarse powder, do not add water.
  • Stuff the prepared powder into ridge gourd.
  • In a kadai add oil, mustard seeds, curry leaves.
  • Saute.
  • Add onion, tomato.
  • Now add turmeric powder.
  • Saute.
  • Add stuffed ridge gourd.
  • Close the lid and cook for 3 mins on medium flame.
  • Saute.
  • Add left over prepared powder, water.
  • Mix well.
  • Add salt, mix.
  • Cook for 7 - 8 mins on medium flame.
  • Delicious Heerekayi Ennegayi / Stuffed Ridge Gourd is ready.
