Beetroot Rice/Pulao

Ingredients

  • 1 cup Basmati rice washed and soaked
  • 1 cup Beetroot chopped
  • 2 tbsp Ghee
  • 1/2 inch Cinnamon
  • 1 Cardamom
  • 2 cloves
  • 2 Bay leaf
  • 1/2 tsp Cumin Seeds
  • 3 - 4 Green chilly slits
  • 1 medium Onion slice
  • 1 tbsp Ginger Garlic Paste
  • 1 medium Tomato chopped
  • 1/3 cup Mint leaves chopped
  • 1/3 cup coriander leaves chopped
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala Powder
  • 1 tsp salt
  • 2 cups Water
  • 1/2 Lemon

Instructions

  • Wash and soak basmati rice for 20 mins.
  • In a pressure cooker add ghee, cinnamon, cardamom, cloves, cumin seeds.
  • Add green chilly, onion, ginger garlic paste.
  • Saute.
  • Now add tomato, mint leaves, coriander leaves.
  • Saute.
  • Add chopped beetroot.
  • Saute.
  • Now add turmeric powder, coriander powder, garam masala powder, salt, mix well.
  • Add soaked basmati rice.
  • Now add water, mix gently.
  • Add lemon juice, give a stir.
  • Close the lid and cook for 2 whistles.
  • Beetroot Rice/Pulao is ready to have.
