Badanekayi yenne Khara / Brinjal Sabji
Badanekayi yenne Khara / Brinjal Sabji, a side dish, brinjal cooked in oil and red chilly powder with a tempering.

Ingredients
- 1 cup Brinjal chopped
- 1/4 cup Oil
- 1/2 tsp Mustard Seeds
- 2 strings Curry Leaves
- 1 big Onion chopped
- 2 medium Tomato chopped
- 2 tbsp Red Chilly Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Salt
- 2 tbsp Coriander leaves chopped
Instructions
- In a kadai add oil, mustard seeds, curry leaves.
- Add chopped onion, saute.
- Now add chopped tomato, saute.
- Add salt, chopped brinjal.
- Mix well, close the lid and cook for 3-4 mins on low flame.
- Add red chilly powder, turmeric powder, mix.
- Now add 2 tbsp of water, give a mix, close the lid and cook for 2-3 mins on medium flame.
- Garnish with chopped coriander leaves, give a stir.
- Spicy Badanekayi Yenne Khara / Brinjal Sabji is ready to have.
