Ash Gourd Yogurt Curry || ಬೂದುಗುಂಬಳಕಾಯಿ ಮಜ್ಜಿಗೆ ಹುಳಿ || पेठा दही करी, a curry recipe, prepared by coconut paste and buttermilk, cooked with ash gourd.

Ingredients
- 1 cup Ash gourd
- 1 cup Curd
- 1+1 tbsp Ghee
- 1 tbsp Rice
- 1+1/2 tbsp Cumin Seeds
- 1/2 tbsp Coriander Seeds
- 1/4 inch Ginger
- 2-3 Green chilly
- 1/2 cup Fresh Coconut grated
- 1+2 strings Curry Leaves
- 1/2 tsp Turmeric Powder
- 2 Dry Red Chilly broken
- 1 tsp Mustard Seeds
- 1/2 tbsp Salt
Instructions
- Heat a kadai.
- Add ghee, rice, cumin seeds, coriander seeds, saute.
- Now add ginger, green chilly, curry leaves, saute.
- Add turmeric powder, grated coconut, saute.
- Allow it to cool down.
- In a kadai, add water, chopped ash gourd, boil till half cooked.
- In a mixing jar, add sauted coconut mixture, water. Blend it to fine paste. Coconut paste is ready.
- In a mixing jar add curd, whisk well.
- To the half cooked ash gourd, add prepared coconut paste.
- Add water according to the curry consistency, mix well.
- Add salt, stir.
- Boil for 3-4 mins.
- Switch off the flame.
- Now add finely chopped coriander leaves, whisked curd, stir well.
- Keep aside.
- Tempering : In a laddle add ghee, mustard seeds, cumin seeds, curry leaves, broken dry red chilly.
- Add this tempering to prepared yogurt curry.
- Give a mix.
