ಅಮಟೆಕಾಯಿ ತೊಕ್ಕು / Indian Hog Plum Tokku, a pickle verity, grated Indian hog plum is cooked in a mustard tempering and a blend of methi-mustard powder.

Ingredients
- 2 cup Grated Indian Hog Plum
- 1/4 cup Oil
- 1+1 tsp Mustard Seeds
- 1 tbsp Fenugreek Seeds
- 1 tbsp Jaggery
- 3 tbsp Red Chilly Powder
- 1 tsp Turmeric Powder
- 1 tsp Salt
- 1/2 tsp Asafoetida/Hing
Instructions
- In a kadai add methi seeds, 1 tsp mustard seeds.
- Dry roast till golden brown colour, cool down completely.
- Add this to a mixing jar.
- Blend it fine powder. keep aside.
- In a kadai add 1 tsp mustard seeds, as it starts to splutter, add asafoetida/hing.
- Now add grated Indian hog plum, stir well, close the lid and cook for 3-4 mins on medium flame.
- Add salt, jaggery, mix well, close the lid and cook for 2-3 mins on medium flame.
- Now add turmeric powder, red chilly powder, blended methi-mustard seeds powder.
- Mix well, close the lid and cook for 3-4 mins on medium flame.
