Aloo Poha
Aloo Poha, a poha recipe, mustard tempered poha with sauted crispy potato with a garnish of coriander reaves and grated coconut.

Ingredients
- 1 Cup Thick Poha
- 1 medium Aloo/Potato
- 2 tbsp Sugar
- 3/4 tsp Salt
- 1 tsp Turmeric powder
- 3 tbsp Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 tbsp Peanut
- 2 strings Curry Leaves
- 1 Green Chilly chopped
- 1 medium Onion chopped
- 2 tsp Coriander leaves chopped
- 2 tsp Coconut grated
Instructions
- In a bowl add washed poha, add water, soak it for 10 mins.
- Squeeze out the water from the soaked poha.
- In a bowl add poha, sugar, 1/2 tsp salt, 1 tsp turmeric powder, mix well, keep aside.
- In a pan add oil, add chopped potato, shallow fry for 2 mins on high flame, keep aside.
- In the same pan for the left over oil, add mustard seeds, cumin seeds, peanut.
- Saute.
- Now add curry leaves, green chilly, onion.
- Saute.
- Add salt, saute.
- Add prepared poha-turmeric-salt-sugar mixture.
- Mix it well.
- Finally add sauted aloo, chopped coriander leaves, grated coconut.
- Stir well.
- Aloo Poha is ready to have.
